What is Lamb Tallow?

Lamb tallow is rendered fat from sheep, usually made from the firm fat found around the kidneys and internal organs. This fat is commonly called suet.


When suet is slowly heated, the pure fat separates from the remaining tissue. The liquid fat is then filtered and allowed to cool. Once cooled, it becomes a smooth, solid fat known as lamb tallow.
